Cherry Trees



I have a couple of tart cherry trees at the top of my driveway. They are so pretty in the spring. I really like tart cherries! My trees are a little overgrown and too tall, so I haven't harvested any cherries from them, but I bought a big tub from a farm market last year, and I think I might again this year, unless I can convince anyone to help me with my trees.

I've found a wonderful cherry pie filling recipe online a few weeks ago, and with a couple of alterations, I've got the perfect cherry pie filling. Now, I just need to find a good supply after we move back to the prairies.

Here's the recipe:
  • 2/3 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 cups fresh tart cherries, pitted
  • 1-1/2 cups water
  • 2 tablespoons lemon juice
  • 1/2 teaspoon almond extract
Combine first three ingredients in a large saucepan. Add remaining ingredients. Bring to a boil; cook and stir for 2 minutes or until thickened and the starch is cooked. Remove from heat. Yield: 4 cups.
